As I’m writing this it’s the very last day of summer vacation.  But I wanted to share this appetizer of caprese salad skewers with balsamic glaze while the farmer’s markets are still bursting with amazing tomatoes and our herb gardens are still going strong.

I made this for the last party of the summer this weekend, when I offered to bring either a salad or an appetizer, then was undecided about which one to do.  #decisionsarehard  So the obvious compromise is to make a salad that’s also an appetizer by putting it on a skewer.  Smart, right?  I love food on a skewer at a party.  No utensils required, you don’t even need a plate.  Somebody host a skewer food only party and I’ll be there with my caprese salad in hand.    Make sure to hop over to my Food on a Skewer Pinterest board for lots of ideas for food that can be served this way.

I like to use the little six inch skewers.  You can easily fit a few pieces on the sharp end and still have a long section of stick to hold to.  For these caprese salad skewers you could slide on as many pieces of tomato and cheese as you like.  I like the pattern of mozzarella between two leaves of basil and then two cherry tomatoes.  Also, I like to use the mini bocconcini or fresh buffalo mozzarella.  It’s the same size as the cherry or grape tomatoes so it looks pretty and minimizes prep time.

If you don’t have them available at your grocery store, of course you could cut a whole mozzarella into cubes, but I encourage you to find the fresh mozzarella if you can.  The lovely mild taste and soft texture really make this combination sing!

The final touch is the pretty drizzle of balsamic glaze.  If you haven’t already discovered this amazing condiment you really need to search it out and keep it on hand.  You might remember that I used it here around Christmas time to make a fancy appetizer out of some boursin cheese.  The glaze easily dresses up so many foods to make them party worthy.  Berries, avocado, and grilled breads just to name a few.
