So my little sous-chef and I were feeling a little peckish yesterday afternoon.  Everyone else away, and only a bare minimum of groceries had been shopped on Re-entry Day One.  He felt that some baking was in order.  OK, I was up for it.  But it needs to be something quick and easy and foolproof…and good.

This is the book that usually gets pulled off the shelf when he wants to bake cookies.  Seriously, it’s like a cookie Bible, so why wouldn’t he choose it?  I never have the excuse of not finding a good recipe in here.  It was one of those books that found it’s way into the shopping cart at Costco on a whim, once upon a time.  And there are some really great recipes in it.  Teenaged Daughter, who is the serious baker in this household, has turned out some High Tea worthy cookies from here.  So there you go, highly recommended if you need a new cookie Bible.

For every recipe there is a double page spread like this with the recipe on one side and a full page photo opposite.  Very important to me to have good big pictures with a recipe.  You can see where a bunch of other pages have been marked with random bookmarks as Keepers.

And away we go.  Only eight very basic ingredients needed.  Nothing even we didn’t have in the house with our minimal grocery purchase.

Yay!  He successfully cracked an egg for the first time.  Life skill learned.  This has been worth it already.  Although he is also very accomplished at fishing out bits of shell with a larger piece of shell.  Did you know that’s how it was done?

Here he is learning the art of the Drop Cookie.  They might not turn out quite as prettily as the photo in the cookbook.  And yes that is my super-ugly and super-used Pampered Chef baking stone.  Don’t know what I would do without it.  In fact you can see my second, slightly newer stone right beside it.  Someday I’ll get a third one I think.

Two cookies with milk, and two cookies with a Double Americano with cream.  The verdict is…delicious.  A little bit cake-y in texture and not too sweet.  Quick, easy, foolproof and good.  This one will get added to the repertoire.  You should add it to yours, too.

Brown Sugar Drops
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup butter, softened
3 tablespoons firmly packed brown sugar
3 tablespoons granulated sugar
1 large egg, lightly beaten
1/2 teaspoon vanilla extract

Preheat oven to 375.  Prepare cookie sheets.  Mix flour, baking soda and salt in a medium bowl.  Beat butter and both sugars with an electric mixer at high speed until creamy.  Add egg and vanilla and mix to blend.  Mix in dry ingredients.  Drop teaspoons of dough 2 inches apart on prepared cookie sheets.  Bake until golden, 7-10 minutes.  Transfer to cooling racks.  Makes 30-40 small cookies.
